How To Make Tasty Shrimp Soup

Shrimps have a chewy texture when cooked and blend well the flavors in a soup. It is always a good idea to use small lean shrimps for making soup rather than their bustier counterparts as they tend to soak up the flavors well. Shrimp soup is easy to make and can be had as a starter before a main course. The next few lines will help you

make shrimp soup in the comfort of your home. This shrimp soup is not excessively spicy, but if you prefer your soup extremely pungent/spicy increase the measure of black pepper and chili sauce. Depending on taste and preference you can also add diced spring onions that offer that unmistakable crunch.

Ingredients
• 3 cups of chicken stock
• 1 cup of small sautéed shrimp without tails
• 1/2 cup white wine
• 2 teaspoons of soy sauce

1 teaspoon of garlic paste
• 1 teaspoon of finely diced ginger
• 1/2 teaspoon of salt
• 1/2 teaspoon of black pepper
• 2 teaspoons of tamarind sauce
• 1 teaspoon of chili sauce
• 1/2 cup of tomato puree
• 1/2 cup small croutons

Method
Collect the chicken stock in a pot and add the salt, black pepper, garlic paste, soy sauce, diced ginger, while boiling. Stir it for a while and lower the flame. Add the shrimp, white wine, tamarind sauce, chili sauce, and tomato puree gently, and stir occasionally. Let it simmer for a while till the sautéed prawns develop a glazed opaque color. Once that’s done your shrimp soup is ready to be served with toppings of small croutons.
